FRANKFORT, Franklin County, Ky (May 2, 2011) – It’s no secret Buffalo Trace Distillery has been on a quest for the perfect bourbon. Dubbed “the Holy Grail” by the company CEO Mark Brown, formal presentations have been given on it, newspaper articles have been written and heck, even a documentary has been produced on it called “Quest for the Perfect Bourbon.”

                On Friday, April 29th, Buffalo Trace Distillery unveiled its latest endeavor to a select group of spirits writers from around the world; a line up of single tree bourbons it hopes will lead to the world’s perfect bourbon.  Officially called Single Oak Project Kentucky Straight Bourbon Whiskey, this project is an amazing mixture of creativity, patience, ingenuity and dedication. 

Buffalo Trace Single Oak Project 1st Release 300x122 Buffalo Trace Distillery Releases Single Oak Project BourbonBeginning in 1999, then Warehouse Manager Ronnie Eddins traveled to the Missouri Ozarks to hand pick 96 trees, consisting of fine grain, medium grain and coarse grain wood, based on the tree’s growth rings. Each type of grain indicates a different growth rate and will yield a different flavor profile.  From there, each tree was cut into a top and a bottom piece, yielding 192 unique sections. Next stop was the lumber yard, where staves were created from each section and were tagged and tracked. The staves were divided into two groups and given different air dried seasonings, 6 months and 12 months.  The air drying allows Mother Nature to break down some of the more harsh flavored characteristics commonly found in wood.  

                After all the staves were air dried, a single barrel was then created from each tree section, resulting in 192 total barrels.

                The next step in the process was to experiment with different char levels of the barrels. Two different char levels were used, a number three and a number four char. (The standard char level for all Buffalo Trace products is a number four char, which is a 55 second burn.)

                Then, barrels were filled with one of two different recipes, a wheat and a rye recipe bourbon. To further the variety of experiments, barrels were filled at two different proofs, 105 proof and 125 proof.  And if this wasn’t enough, two completely different warehouses were used, one with a wooden ricks and one with concrete floors.  In total, seven different variables were employed in Buffalo Trace’s ultimate experiment.

                And then, the waiting began.  For eight years the Distillery continued with its tracking process, creating intricate databases and coming up with a potential of 1,396 tasting combinations from these 192 barrels!

       The first release of the Single Oak Project Bourbon is expected to hit stores nationwide in very limited quantities around the end of May. Each release will consist of 12 unique single barrel bourbons. Every case will contain 12 bottles, each from a different barrel. The first release is made up of barrel numbers 3, 4, 35, 36, 67, 68, 99, 100, 131, 132, 163 and 164. Each of these barrels had the same entry proof, seasoning, char level and warehouse aging location. However, the  hope is to identify the differences in taste based on recipe, wood grain size and tree cut as these characteristics varied amongst this group of barrels. There will be a series of releases over the next four years until all of the 192 barrels have been released.  All releases will be packaged in a 375ml bottle. Suggested retail pricing is $46.35.

For the Dalmore Gran Reserva the Master Distiller selects the most intense whiskies, typically aged from 10 to 15 years, drawn exclusively from first fill oaken casks. The assembly combines whiskies from both Oloroso sherry butts and Bourbon barrels in an approximate two thirds to one.  The Dalmore Distillery is known for their signature flat top wash stills, cold water jacket spirit stills and bespoke oak cask maturation.  Dalmore Single Malt Scotch Whisky stakes its claim as one of the best of the Highland region and is located on the northern shores of the Firth of Cromarty in the Highlands. The distillery is sited near Loch Morie and the coast of the Black Isle.  According to Dalmore, being elevated at sea level is critically important to the maturation of their scotch.  Many single malts gain much of their character from a salty ocean water air.  The Dalmore Gran Reserve is a great single malt scotch. 

The Dalmore Gran Reserva Tasting Notes:  The scent is thin like a tequila, not sweet but a bit chocolaty, dry, light, light in peat and smooth.  The water opens up the peat but it’s a thin smooth single malt.

In the tradition of the Kentucky Derby, we’d like to invite you to sit back, relax and pour yourself a Woodford Reserve mint Julep.  What better way to enjoy a classic drink then with a classic bourbon.  The Woodfor Reserve is a handcrafted 90.4 proof Kentucky Straight Bourbon.  It’s a great balance for a bourbon whiskey with a little complexity and rather smooth.

1 serving

1 level tsp powdered sugar

2 – 3 fresh mint leaves

Crushed ice

2 oz. Woodford Reserve, plus a bit more for muddling

Place powdered sugar in julep cup. Add fresh mint leaves. Wet with a splash of Woodford Reserve and muddle together using wooden muddler (a spoon works well aslo). Fill the cup 2/3 full with crushed ice. Add a straw and mint sprig. Garnish and tamp down ice with muddler. Add 2 oz. of Woodford Reserve, and top off the cocktail with loose crushed ice.

The Templeton Small Batch Rye Whiskey

During prohibition when alcohol was banned, Templeton Rye grew in legend.  Still made from the original recipe in charred new oak barrels, not only was Templeton Rye Al Capone’s whiskey of choice, it was a major piece of his bootlegging empire. In order to be called a rye, there needs to be a rye quantity of 51% in the sour mash. Templeton Rye however uses a 90% rye based mash and a 25% backset. Meaning, 25% of each mash is derived from the previous mash and so on. Each batch of rye whiskey is connected to the next.

The Templeton Rye Review and Flavor:

At first scent, the rye has a light bourbon hint with a deep scent of grain. The taste is a little sweet, but smooth with a good bite. The flavor of grain is a major statement with a rye and corn taste. Sometimes a dry and sour aftertaste, the is a all-around spicy finish. The Templeton Rye is full bodied, smooth, sweet, and the deep malt and grain grows on you with every sip. Templeton Rye just gets better and better each time we sip it. Wait, let me confirm. Yup!

A staple of the bourbon industry and one of the fastest growing, Bulleit Bourbon, is introducing a Rye Whiskey in honor of a 150 year family recipe.  As the Bulleit Bourbon already has one of the highest Rye contents for a Bourbon, a pure Rye Whiskey is a natural progression and one that should be embraced by their loyal fans, many of which write for this very web site.  Bourbons are required to be made up of a majority of corn mash but Bulleit Rye will be a 95% Rye and 5% malted barley.

The recipe for Bulleit Rye is as follows:  Similar to the craftsmanship behind the original Bulleit Bourbon recipe created by Tom’s great-great grandfather Augustus Bulleit, it was of great importance that Bulleit Rye replicates the same high quality taste of its Bulleit Bourbon counterpart.  The utmost care and precision is taken to produce Bulleit Rye, from selecting the highest quality rye grains, to sourcing our water from an ancient glacier aquifer that maintains a consistent temperature of 56 degrees.  The liquid is then fully aged and matured in new charred oak barrels for a minimum of 4 years.

Review of Bullet Bourbon

The smell is of cinnamon and honey and pumpkin, sweet things, and I want to say prune, but then again I typically want to say prune.  The taste is unique, to my tongue, for a bourbon.  There’s almost a cotton-candy sweetness at first bite- followed by the vaguest hint of fire jolly rancher.  The burn is spicy but not too harsh, like good buffalo wings.  And then there’s that glorious aftertaste: the second after the drink goes down there’s this lingering something that I have only ever found in Bulleit.  It’s the sort of special flavor that can bring to mind old memories in a flash, like Proust and his Madeleine, or the guy from Blues Traveler and his chili.

 Now, I’ve since had better bourbons with more interesting flavors, liquid symphonies and blissful maelstroms, but I will always have a soft spot for this, my first discovery and still one of my favorites.  If there was a rating system on Whiskey Goldmine, I’d give it 9 out of 10 Whiskey Goldmine Units (WGUs)!
