The Benihana Premium Sake Flight: Sho Chiku Bai Nigori, Suigei, and Dassai Sake’s

benihana japanese steakhouse hibachi The Benihana Premium Sake Flight: Sho Chiku Bai Nigori, Suigei, and Dassai Sake’sBy Matt Goldstein & Amy K. Haight

Sake, a rice based alcoholic beverage from Japan, often called Rice Wine, is making a major ressurgance in the world of alcohol, especially the United States.  Benihana, the hibachi chain restaurant now serves two flights of Sake, the standard flight and the premium flight, where you can sample three sakes each.  We drank both, of course.  Did you expect anything less?  One thing we’d like to do at Whiskey Goldmine is drink more sake, much more sake.  Check these three Sake’s and sample some rice wine whenever you can, best served cold.  Sake is based on a scale of -20 (sweetest) to +20 (driest).

sho chiku bai nigor creme sake The Benihana Premium Sake Flight: Sho Chiku Bai Nigori, Suigei, and Dassai Sake’sSho Chiku Bai Nigori Crème de Sake:

The Sho Chiku Bai is a cream based Sake and actually white in color.  Made in Berkley CA by Janmai Nigori, the Sho Chiku Bai is rated at -15.  With a good rice, full and sweet scent, the flavor is slightly tart and crisp.  Perhaps a hint of metallic, the vanilla is a bit off.  The sour vanilla might not be the best balance, and the crisp kick goes flat very quickly, but it did have a good crisp kick in the last sip.  This Sake is somewhere between OK and good.

.

Suigei Drunken Whale Sake:

The Suigei Sake by Tokubetsu Junmai in Kochi Japan is rated at a +7.  With a scent of a light white wine, a crisp and light flavor and feel, there is not much rice flavor.  The Suigei is thin with a good bite and a hint of lemon.  This is a very good sake, complex and crisp and very well balance.  We absolutely recommend the Suigei sake.

Dassai Sake is made by Junmai Dai Ginjo in Yamaguchi Japan and rated at +4.  This sake has a strong and sweet scent of rice with a full thick mouthfeel.  Tart, with a strong bite in the finish, it gets better as you sip.  Slightly dry, sweet, light and refreshing, this Sake is excellent.  Dassai Sake is a flatout out stud and we highly recommend it.
